This Caesar salad dressing gets glowing reviews from my family and friends. Dress any lettuce of your choice with this amazing dressing. I alternate between kale and romaine lettuce. High fibre gives the kale higher nutritional value than romaine.
Using kefir or greek yogurt instead of the typical mayo in a Caesar dressing gives this recipe a nutritional boost. Kefir and greek yogurt naturally contain lots of probiotic cultures that strengthen the digestive tract.
INGREDIENTS:
1/4 cup plain kefir or greek yogurt
3 cloves peeled garlic minced
1/2 teaspoon of anchovy paste
1 tablespoon of lemon juice
1 tablespoon of red wine vinegar
1 teaspoon of dijon mustard
1 teaspoon of Worcestershire sauce
1/2 cup of olive oil
1/2 cup grated parmesan cheese
8 cups of lettuce of choice
DIRECTIONS:
Place all the ingredients except the parmesan in the food processor and blend.
Add the parmesan and blend some more until you have a creamy texture.
Toss with lettuce.
For 4 portions of Kale Caesar use approximately 10 cups of finely chopped kale with 1/3 a cup of dressing. I recommend using cooking gloves to massage the dressing into the Kale.
Option to top with croutons or crispy chickpeas or protein for a complete meal and freshly ground pepper and more dressing if needed.
Yields 1 cup of dressing
