This recipe comes from Dr.Joel Fuhrman. He is the author of many incredible cookbooks including Eat For Life and Eat to Live. This brownie will fulfill any sweet craving while providing nutrients at the same time. I have a sweet tooth and this combo of dates, nuts and cocoa definitely hits the sweet spot!! These brownies are protein rich from the nuts and seeds so could be eaten as a pre or post workout snack. The chocolate flavour comes from the cocoa powder which is bursting with health benefits including blood sugar management, anti inflammatory and anti oxidant properties.
Enjoy a brownie or two with a cup of tea or a glass of red wine!
INGREDIENTS:
(YIELDS 25 small squares in a 8X8 inch baking pan)
1/2 cup of raw almonds (or any unsalted almonds that aren't roasted)
1/2 cup of raw cashews (or any unsalted cashews that aren't roasted)
1/4 cup hemp seeds
3/4 cups of chopped walnuts divided - save 1/2 for the topping
2 cups of Medjool dates, pitted - remove the hard ends
1/2 cup unsweetened cocoa powder
1/3 cup organic peanut butter unsalted
2 tablespoons cocoa nibs
DIRECTIONS:
Line a 8 X 8 inch square pan with parchment paper.
Place almonds, cashews, hemp seeds and half the walnuts in the food processor. Process until finely ground.
Add the dates - process until the mixture becomes like a paste and begins to form a ball.
Mix in the cocoa powder, peanut butter and cocoa nibs - blend more until well combined.
Using cooking gloves press the mixture evenly in the parchment lined pan. Or add the mixture to pan, adding a piece of parchment on top to evenly distribute the dough.
Sprinkle with remaining chopped walnuts and press them into the dough.
Cover and refrigerate for an hour.
Cut into squares, you can choose the size but I do 25.
You can cover and keep refrigerated for up to a week ( if they last that long without being enjoyed :)
