Raspberry Protein Oats

This is my simple, quick & delicious pre or post workout breakfast. It is filled with fibre from the ground flaxseed & raspberries, and protein from the egg whites & oats. Eating adequate amounts of protein at breakfast helps to minimize cravings for snacks later in the day.


Ingredients:

  • 1/3 cup thick/old fashioned rolled oats

  • 1/3 cup water

  • 1/3 cup egg whites (I use egg whites from a carton, this portion is two fresh egg whites)

  • 1 tbsp of ground flaxseed

  • 3/4 cup of frozen raspberries (please note the raspberries have to be frozen)

  • Cinnamon


Directions:


Heads up - this recipe is so quick that it works best if you have your ingredients measured out and ready to go before you start cooking.

  1. Add oats and water into a small pot, bring water to a boil and reduce to simmer. This takes less than a minute.

  2. Immediately add the egg whites and frozen raspberries, continue stirring for about 2 minutes on low heat until raspberries begin to soften.

  3. Then add in the ground flaxseed, keep stirring for another minute.

  4. Top with a sprinkle of cinnamon

Cook time: 5 mins
